Advanced Professional Cookery – City and Guilds Level 3 Diploma
Duration
Advanced Professional Cookery is a full time Level 3 Diploma run over 2 years attending college on four days day per week including evening sessions.
Introduction
This full time course is designed to meet the needs of students who work or want to work as chefs in the Catering and Hospitality industry. It is designed for students to learn, develop and practice the skills required for employment and/or career progression in the sector.
Advanced Professional Cookery is taught at our Longbridge campus, based in Birmingham. Due to the location of the campus the college has great transport links with, Birmingham, Solihull, Sutton Coldfield, Coventry, Warwick and other surrounding areas.
Content
- Supervisory skills in the hospitality industry
- The principles of food safety supervision for catering
- Practical gastronomy
- Advanced skills and techniques in producing vegetable and vegetarian dishes
- Advanced skills and techniques in producing meat dishes
- Advanced skills and techniques in producing poultry and game dishes
- Advanced skills and techniques in producing fish and shellfish
- Producing fermented dough and batter products
- Produce petit fours
- Produce paste products
- Produce hot, cold and frozen desserts
- Produce biscuits, cakes and sponges
- Food product development (elective Unit)
Teaching Methods
Learners develop their skills through a combination of lectures, practical demonstrations, educational visits, internet research tasks, written assignment tasks, visiting speakers from industry and practical sessions. Learners will work in our state-of-the-art production kitchens serving in our Urban Flavours Restaurant.
Assessment
Assessment is by assignment, tasks are graded pass, merit or distinction. Assignment tasks cover all outcomes of practical activity. There are eight individual practical tasks and two synoptic assignments; nine underpinning knowledge short answer tests together with City and Guilds short answer paper on the principles of food safety supervision for catering.
Qualification Gained
Learners gain the Level 3 Diploma in Advanced Professional Cookery (7100-83).

HNC Level 4 Diploma in Hospitality Management
Entry Requirements
- Level 2 Diploma in Professional Cookery
- GCSE Grades A-C in English and Maths or equivalent
- Successful interview
24+ ADVANCED LEARNING LOANS
From April 2013, anyone aged 24+ and starting a course on or after 1 August 2013 may apply for a 24+ Advanced Learning Loan. The loans are designed to help you pay your tuition fees and are available to all UK nationals* studying at Level 3 or Level 4 or an Advanced or Higher Apprenticeship. It’s easy to apply, your household income isn’t taken into account and there’s no credit check. You won’t have to pay anything back until your income is over £21,000 a year. If your loan is for an Access to Higher Education programme and you progress to complete a Higher Education programme, you will not have to pay back your 24+ loan!
