Duration

1 year full time.

Introduction

This full time programme provides students with an emphasis on developing food preparation, cooking and service of a range of dishes.  The programme gives learners the opportunity to develop a further range of basic skills which are essential to a wide range of food production and service outlets.

Content

The Level 2 Diploma in Professional Cookery and the Level 2 Certificate in Food and Beverage Service covers basic skills and techniques required by the hospitality industry.

The Professional Cookery programme covers:-

  • Investigate the catering and hospitality industry
  • Food safety in catering
  • Health & safety in catering
  • Kitchen operations costs and menu planning
  • Prepare and cook meat and offal
  • Prepare and cook poultry
  • Prepare and cook fish and shellfish
  • Prepare and cook desserts and puddings
  • Prepare and cook bakery products

Certificate in Food and Beverage Service includes:-

  • Legislation in food and beverage service
  • Understand menus
  • Introduction to personal workplace skills
  • Food and beverage service skills
  • Hot beverage skills

The course will also include the CIEH Level 2 Award in Food Safety, which is completed during the initial weeks of the course.

Functional Skills

Functional Skills are a compulsory part of all Sixth Form Centre courses.  Students set targets to improve their skills, and gain qualifications, in English, Maths and/or IT. The Functional Skills and levels taken are based on initial assessment and previous GCSE results.  There is a particular emphasis on skills required for Catering.  Students build up a folder of evidence from their vocational work and may be required to sit one or more tests.

Teaching Methods

A range of teaching methods are used – lectures, practical sessions, educational visits and visiting speakers. Students will work in our state-of-the-art production kitchens serving in our Urban Flavours Restaurant.

Theory classes are delivered in a bespoke catering theory room equipped with computers with internet access.

Assessment

Much of this programme is assessed by a series of planned assessment activities both written and practical.  Students will keep a portfolio of all their course work and support the regular completion of Individual Learning Plans.

Level 2 Certificate in Food and Beverage Service
Level 1 or Level 2 Functional Skills in English
